Although the Trump Administration views refugees as security risks, and despite the fact that they are being denied entry to the United States in historic numbers, delicious counter-narratives are emerging throughout the country and particularly in the New York area. Americans are breaking bread with refugees in homes, offices and restaurants — devouring food prepared with ancient recipes from the old country and techniques taught by grandma. In the process, new financial, emotional and social opportunities are opening up for refugees.

But she said everything changed in March 2017 around Nowruz, the Persian New Year, when she found a job at Eat Offbeat, a New York-based catering company, which is run only by refugee chefs from different parts of the world including Eritrea, Algeria, Senegal, and China.

Called “culinary journeys,” the menus served by Eat Offbeat are a combination of dishes from the home countries of the refugee chefs.

“When I first came my English was very bad, and all those people who were working with me were from different countries,” Nasrin said. “We got deeply attached with each other [and] the working atmosphere [was] very friendly. This was… to me, a world with no boundaries we were respected each other just like a family.”

One of the enormous presentation slides behind her had the catch phrase, “Come for the mission, stay for the food.” She rattled off countries where Eat Offbeat’s chefs originate—Nepal, Syria, Eritrea, Senegal, Algeria—among others, 15 countries in total; 12 languages spoken in the kitchen. Eat Offbeat’s dishes are authentic, prepared as they would be in the chef’s home.

She says that the company tries to avoid framing its chefs based on their status, as refugees, and avoid constructions such as “refugee chefs.” In all of the company’s external communication, Kahi says it strives to portray its chefs as happy, courageous and resilient, while erasing the negative connotation of refugees as people who are vulnerable or need help.

The purpose of the project, however, extends far beyond giving readers a glimpse into different cuisines as they exist today or, say, how to properly cook lentils the Eritrean way. It will share the stories of the chefs themselves, explaining why they’ve chosen particular recipes, and what the dish means to them. It will go into the personal tweaks they’ve made along the way, whether because of an allergy or in favor of a particular ingredient. More importantly, it’s about giving a voice to these often-voiceless people. Ones whose own stories they often have little control over, and who are almost always whittled down to simply being victims.

On March 15th, Vivian Chui, Curatorial Assistant at Pioneer Works brought Manal Kahi, CEO of Eat Offbeat into our studio for an informative discussion about how both organizations hope to help refugees in New York City and across the world.

Eat Offbeat serves meals conceived and prepared by refugees who now call New York City home.Their menus are hand-prepared by their chefs, who marry centuries-old culinary traditions with their personal touch as newly trained professional chefs. In a single meal, you can enjoy dishes from four or five different countries and regions that, even in New York City, are off-the-beaten path recipes new to most. The meals are layered with generous flavors developed with a judicious hand and, by nature, are very accommodating to a wide variety of dietary needs.

Already,
it has served more than 15,000 meals to companies
and universities, families and nonprofits, to groups of 10 to
700 people. One of the reasons for the success, says Manal,
is that “people want to help.” She notes, with a faint smile, “Some people find us by Googling ‘How to help refugees in New York.’” They come back, however, for the food. “We always emphasize,” she says, “that our cooks are refugees by status but chefs by nature.”

Yet they’ve found that training is about more than just on-the-job skills. One employee tried to back out of work before the first day because she had never used the subway before. Kahi went to the employee’s house and commuted with her once or twice “until she learned how to use the subway.” It’s a small price to pay for the benefits Kahi’s business and the employees receive. “Having a first job in a different culture where you don’t speak the language and don’t have any connections is 10 times more difficult,” Kahi says. “We’re trying to find ways to help them through these challenges.”

But its founders – Lebanese immigrant siblings Manal and Wissam Kahi – point out that the social impact of their start-up was secondary to their main goal; giving locals the opportunity to enjoy “authentic” dishes without having to travel abroad.

“We are not doing this just to help refugees – but to help the refugees bring delightful food to New Yorkers,” they told Al Jazeera. “People will come to us when they hear about the refugees, but they come back because they love our food.”

Their slogan is: “Where the adventurous eaters find refuge.”
